The 2008 Nueces County 4-H Canning and Yeast Bread Show is a highlight to the 4-H Food & Nutrition project members that participate.

Nueces County Extension Agent Rusty R. Hohlt said the participants successfully met the objectives of acquiring knowledge and developing skills essential to the successful preparation of foods through canning and the baking of yeast breads.

Other show objectives included acquiring knowledge of basic scientific principles required for safe handling of foods related to canning and bread making, supplementing the home food supply by canning and the making of yeast bread, recognizing 4-H youth for accomplishment in the area of food preservation and of yeast bread, and encouraging interest in the 4-H food preservation project and the 4-H yeast bread project.

This year, there were 21 participants and 93 different entries, making for a varied show. Age divisions ranged from the Clover Kids (5 to 8), Juniors (8 and in third grade to 10), Intermediates (11-13), and Senior (14 to 18).

Canning entries were judged on the container's appearance, the product color, texture, and flavoring. Yeast Bread entries were judged on appearance, texture, shape, and flavor.

The show coordinators were Imogene Hayek of Corpus Christi and Chris Kircher of Robstown. Serving as judges were Nora Govea of Alice, Kimberly Hunter of Mathis, Nita Romike of Mathis, Lisa Newcomb of Robstown, and Talma Benavides, Margaret Boerm, Janet Lange, Helen Orsak, and Jan Shannon, all of Corpus Christi.

Relishes-Junior, Kelsey Lange of Tuloso-Midway and C&T 4-H Clubs, recipe - fiery BBQ sauce; Intermediate, Adam Frederiksen, Run-In-JM 4-H, recipe - sweet & sour BBQ; Senior, Julie Kircher, C&T 4-H Club, sombrero BBQ sauce. Soft Spreads-Junior, Jaime Sullivan, Chaparral 4-H, citrus jelly; Intermediate, Trysten Dangler, Run-In-JM 4-H Club, apple butter; Senior, Travis St. Clair, Tuloso-Midway 4-H, strawberry preserves.

Overall canning category winner went to Intermediate, Adam Frederiksen of Run-In-JM 4-H for his sweet & sour BBQ recipe.

Sweet, Basic, and Flavored made up the Yeast Bread category.
